What to Eat in the Summer - Garden Veggie Hummus Plate

 


Summertime calls for easy meals that put to use what's up in the garden or those veggies you brought back from the farmers market. Produce is at it's best when it's fresh from the soil, so why take the time on a beautiful day to cook it? Put together a hummus plate to show off nature's bounty.

Hummus plates are great for utilizing your local ingredients that are in season. Here I have homemade hummus (that I made with Michigan grown mayacoba beans), homegrown cucumber slices, carrots, kohlrabi, radishes, and a sour pickle. Then it's topped with grilled corn, green onions, and pickled onions. Green beans also work great with hummus, as do broccoli and snow peas. Later in the season peppers and cherry tomatoes are delicious. Topping your plate with fresh or grilled corn is a different use for that summertime favorite, plus makes it a little more filling.
